Well... Maybe I should revisit my classics, but I didn't notice that fact.
Informations about Shub-Niggurath are rather sparse and often contradictory. Many names for the same creatures, individuals mingled with abstract concepts. All that added to the secret surrounding the Mythos (for evident reasons).
I remember having read novels where Shub-Niggurath was clearly designated as a Black Goat, maybe I missed something here. If you have informations telling the contrary, I would welcome them.
